What people eat in Canarias when they eat well.
Heirloom potatoes boiled in very salty water, with red or green mojo sauce.
Toasted maize flour, a Guanche legacy: in escaldón, kneaded or with milk.
Majorero and Palmero, with PDO; smoked or cured to taste.
Small, sweet and speckled; with its own PGI.
Almost every village has its market day and its producers: the cheesemaker, the baker, the vegetable garden next door. Ask at the tourist office or the bar on the square; they'll tell you where to buy straight from the maker.
We haven't confirmed Hermigua's market day. Every village has its own: better to ask than to make it up.
